Creamy Scrambled Eggs with Ham
Kickstart your morning with a delicious, protein-packed breakfast featuring our farm-fresh EB eggs, perfectly scrambled and paired with savory diced ham.
Ingredients
8 Eggland’s Best Eggs (large)
1/3 cup heavy whipping cream
2/3 cup cubed fully cooked ham
1 green onion, chopped
Dash salt
Dash pepper
4 teaspoons butter
4 ounces cream cheese, cubed
Preparation
- In a large bowl, whisk eggs and cream.
- Gently incorporate the diced ham, finely chopped green onion, a careful pinch of salt, and a light dusting of freshly ground black pepper into the egg mixture, ensuring even distribution of ingredients.
- In a spacious, heavy-bottomed skillet, melt the butter over medium heat until it begins to foam but doesn't brown. Tilt the pan to ensure the melted butter coats the entire cooking surface evenly, creating a non-stick foundation for your scrambled eggs.
- Carefully pour in the seasoned egg mixture, allowing it to spread naturally across the pan's surface. Using a rubber spatula or wooden spoon, begin to gently push the eggs from the edges toward the center of the pan. As the eggs begin to set, continue this folding motion, creating soft, fluffy curds. Cook until the eggs are almost set but still appear slightly glossy and moist, as they will continue to cook from residual heat.
- When the eggs have reached an almost-set consistency, distribute the cubed cream cheese evenly throughout the pan. Continue cooking and gently stirring until the cream cheese begins to soften and create ribbons of creamy richness throughout the scrambled eggs. The final texture should be light, fluffy, and creamy, with the cream cheese fully incorporated but still maintaining small, distinct pockets of richness.
