Croissant Egg Sandwiches

Ingredients
2 tablespoons Dijon mustard
2 tablespoons salted butter
2 tablespoons honey
4 large croissants
8 slices cheddar cheese
½ pound deli-sliced ham
8 slices cooked bacon

Splash of milk
Salt and pepper
1 tablespoon butter
Fresh chives for garnish
Preparation
- Begin by preheating your oven to 350°F.
- In a small bowl, mix together your Dijon, butter, and honey. Place in microwave for 20 seconds until butter melts completely; blend well to combine.
- Take your croissants and carefully slice them horizontally using a serrated knife. Apply the dijon-butter mixture generously to the cut surfaces.
- On each croissant bottom, start layering with cheese, followed by ham, then bacon, and top with another slice of cheese. Place the croissant tops on. Transfer to a baking sheet.
- Let them bake for 10-15 minutes until you see golden tops and melted cheese.
- Meanwhile, combine your eggs and milk in a bowl, adding a touch of salt and pepper.
- Heat 1 tablespoon butter in a nonstick pan over medium heat. Pour in eggs and create a soft scramble, cooking for 2-3 minutes.
- Once croissants are done, add your scrambled eggs and finish with fresh chives.
