Ingredients

2 tablespoons Dijon mustard

2 tablespoons salted butter

2 tablespoons honey

4 large croissants

8 slices cheddar cheese

½ pound deli-sliced ham

8 slices cooked bacon

5 Eggland's Best eggs, large

Splash of milk

Salt and pepper

1 tablespoon butter

Fresh chives for garnish

Preparation

  1. Begin by preheating your oven to 350°F.
  2. In a small bowl, mix together your Dijon, butter, and honey. Place in microwave for 20 seconds until butter melts completely; blend well to combine.
  3. Take your croissants and carefully slice them horizontally using a serrated knife. Apply the dijon-butter mixture generously to the cut surfaces.
  4. On each croissant bottom, start layering with cheese, followed by ham, then bacon, and top with another slice of cheese. Place the croissant tops on. Transfer to a baking sheet.
  5. Let them bake for 10-15 minutes until you see golden tops and melted cheese.
  6. Meanwhile, combine your eggs and milk in a bowl, adding a touch of salt and pepper.
  7. Heat 1 tablespoon butter in a nonstick pan over medium heat. Pour in eggs and create a soft scramble, cooking for 2-3 minutes.
  8. Once croissants are done, add your scrambled eggs and finish with fresh chives.
