This viral recipe transforms toast into a creamy, cheesecake-like breakfast by baking a mixture of Eggland’s Best eggs and Greek yogurt right on top. It’s slightly sweet with a mix of carbs and protein to fuel your upcoming Pilates session. Make them in the air-fryer or oven.

Ingredients

2 Eggland’s Best eggs, large

1/2 cup 2% plain Greek yogurt

1 teaspoon vanilla extract

4 slices whole grain bread

1/2 cup fresh berries

2 tablespoons maple syrup

Preparation

  1. Pre-heat air fryer to 325° F (or oven to 350° F).
  2. In medium bowl, whisk Eggland’s Best eggs, yogurt, and vanilla to make the custard.
  3. With the back of a spoon, press down on bread slices to make wells out toward the crust.
  4. Carefully spoon on 4 tablespoons of custard into each of the wells and top with berries.
  5. Air fry about 10 minutes, until the custard is set and golden (or about 16 minutes in oven).
  6. Before serving, drizzle each piece with 1/2 tablespoon of maple syrup.
  7. Eat right away or store in an airtight container in the fridge for up to 3 days.
