Desi Shakshuka
This Desi Shakshuka will fill the kitchen with irresistible aromas. Featuring spiced tomato sauce and perfectly poached eggs, it pairs beautifully with any fried bread—though naan takes it to the next level. A warm, flavorful breakfast that’s perfect for weekend mornings.
Ingredients
4 tbsp extra virgin olive oil
1 tbsp cumin seeds
1 medium chopped onion
3 medium sliced tomatoes
1 tbsp tomato paste
Salt and pepper to taste
3 eggs
Feta cheese
Chopped cilantro
2 tbsp ghee
Preparation
- In a shallow pan add olive oil.
- Once hot, add cumin and toast it for just 30 seconds for that toasty aroma.
- Then add onions and sauté for couple of minutes till it’s translucent.
- Now add salt and pepper. Some tomato paste goes in. You must mix it well.
- Time to add tomatoes. Cover and let it soften on medium heat for 10 minutes.
- Uncover and mix well. Once the oil separates, crack 3 eggs. Salt and cover for additional 5 minutes.
- Time for some feta and cilantro leaves.
- Enjoy it with any kind of bread you prefer.
