Easy Egg Breakfast Rollup
These easy protein-rich scrambled egg tortilla rollups take less than 5 minutes to make and are a super family-friendly breakfast! Can be made ahead and frozen then reheated.
Ingredients
6 Eggland's Best large eggs
4 soft taco flour tortillas
1/4 cup whole milk
6 ounces diced summer sausage (about 1/2 cup)
1/2 cup shredded cheddar cheese
1/4 teaspoon Lawry's seasoned salt
Preparation
- Whisk eggs, milk and Lawry's seasoned salt together until combined
- Scramble the mixture on the stovetop until light and fluffy
- Add the diced summer sausage to the scrambled eggs about halfway through the cooking process
- Once the eggs have fully cooked, turn off the stove and sprinkle the shredded cheese over the top of the eggs. Allow the cheese to melt completely before assembling the tortilla rollups.
- Lay out the 4 tortillas and place the assembled eggs over half of the tortilla.
- Roll the tortillas and cut in half.
