Fluffy scrambled eggs, crispy bacon or sausage, roasted potatoes, and shredded cheese, all wrapped up in a soft tortilla. These burritos are perfect for freezing and reheating on busy mornings.

Ingredients

8 Eggland's Best Eggs

6 large flour tortillas (burrito size)

1/4 cup Heavy Cream (optional, for creamier eggs)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup cooked breakfast meat (bacon, sausage, or chorizo, crumbled)

1 cup roasted potatoes or hash browns (diced and cooked)

1/2 cup shredded cheese (cheddar, pepper jack, or your favorite)

1/2 cup diced bell peppers (optional)

1/4 cup diced onions (optional)

1 tablespoon olive oil or butter (for cooking vegetables)

Preparation

Cook the fillings:

  1. Prepare breakfast meat and set aside.
  2. Cook potatoes or hash browns until crispy and golden.

Scramble the eggs:

  1. Whisk eggs with milk, salt, and pepper. Cook in a nonstick pan over medium heat, stirring gently until just set.

Assemble the burritos:

  1. Lay a tortilla flat. Add a portion of eggs, meat, potatoes, veggies, and cheese to the center.
  2. Roll tightly, tucking in the sides to seal the filling.

Wrap for storage:

  1. Wrap each burrito in foil or parchment paper, then place them in a freezer-safe bag or container.

Reheating:

  1. Microwave: Remove foil, wrap in a paper towel, and microwave for 1-2 minutes until warm.
  2. Oven: Reheat in foil at 350°F (175°C) for 20 minutes.
