Egg Bhurji

Egg Bhurji is a scrambled eggs dish with lots of flavorful spices, onion, tomato, bell peppers, cilantro. Its best to be served with bread or naan for dinner.
Ingredients
1 Tbsp. butter
1 Tbsp. oil
1 tsp. cumin
1 green chili, chopped
1 tsp. ginger, chopped
1 medium onion, chopped
1 small bell pepper, chopped
1 large tomato, chopped
½ tsp. turmeric powder
1 1/2 tsp. red chili powder/paprika
1 tsp. garam masala
Salt to taste
1 Tbsp. lemon juice
Cilantro
Preparation
- In a medium bowl, break the eggs and add salt.
- Mix it with a fork and keep it aside.
- Heat a large skillet, add butter and oil. Once the oil is melted add the cumin seeds.
- Add the green chili, ginger and onion. Cook until the onion turns translucent.
- Add the bell peppers and cook for 3-5 minutes.
- Add the tomatoes followed by the spice powders and salt. Once the spices and the masala come together, add the beaten egg mixture. Cook on a low flame, keep stirring.
- When the eggs are fully cooked, add a few drops of lime juice and fresh cilantro.
- Serve the egg bhurji with bread or buns.
