Ingredients

Base

12 Extra Large Eggland’s Best Eggs

Hot Honey

Filling:

• 4 egg yolks

• 2 tbsp mayo

• 1 tsp Dijon

• 1 tsp relish

• 1 tsp hot sauce

• Paprika, salt & pepper to taste

Topping:

• Jalapeño slices

• 8 small pieces of popcorn chicken

Battered Egg Whites:

• 1 cup panko

• ¼ cup flour

• 1 whole egg, beaten

• Oil, for frying

Carbonara

Filling:

• 4 egg yolks

• 2.5-3 tbsp mayo

• 2-3 tbsp Parmesan cheese

• Reserved pancetta fat

• ½ tsp black pepper

Topping:

• Parsley

• 1tsp Parmesan

• 1 tbsp Pancetta

Mojo Plantain

Filling:

• 4 egg yolks

• 1 tsp yellow mustard

• ½ tsp orange juice

• ½ tsp lime juice

• 1 garlic clove

Topping:

• 3-4 ripe plantains, fried

• Cilantro

Preparation

1. Cook the Eggs

  1. Boil eggs for 12 minutes
  2. Once finished, let eggs cool down in ice water for 5-10 minutes.
  3. Peel and slice in half lengthwise and carefully remove yolks

2. Prepare the Fillings (can be done in a food processor or by hand)

  1. Hot Honey:
  2. • Mash yolks until smooth.
  3. • Mix in mayo, Dijon, relish, hot sauce, and paprika.
  4. Carbonara:
  5. • Mash yolks until smooth
  6. • Mix in mayo, parmesan, pancetta fat and black pepper
  7. Mojo:
  8. • Mash yolks until smooth
  9. • Mix in mayo, mustard, citrus juices, and garlic
  10. • Taste and adjust acidity/salt as needed

3. Fry the Egg Whites (Hot Honey Variation Only)

  1. Pat egg whites dry
  2. Dredge in flour → dip in beaten egg → coat in panko.
  3. Fry until golden and crisp (about 1–2 minutes).
  4. Drain on paper towels.

4. Assemble the Egg Flight

  1. Hot Honey:
  2. • Fill crispy fried egg whites with hot honey yolk mixture
  3. • Top with popcorn chicken, jalapeño, and chives
  4. • Drizzle with hot honey
  5. Carbonara:
  6. • Fill egg whites with carbonara yolk mixture
  7. • Top with extra pancetta, Parmesan, and parsley
  8. Mojo Plantain:
  9. • Fill egg whites with mojo yolk mixture
  10. • Top with fried plantain slices and cilantro
