Energizing Egg White Scramble & Avocado Toast

Ingredients
For the avocado toast:
2 slices whole-grain or sourdough bread
1 ripe avocado
1 teaspoon kosher salt
Ground black pepper, to taste
Red pepper flakes or everything bagel seasoning, optional
For the veggie scramble:
1 cup Eggland’s Best liquid egg whites
1/4 cup chopped zucchini or yellow squash
1/4 cup sliced mushrooms
1/4 cup chopped red bell pepper
1/4 cup chopped onion
1 1/2 cups fresh spinach
1/4 cup cherry tomatoes, halved
1 teaspoon olive oil or butter
2 tablespoons shredded cheese, optional (feta or cheddar)
1 teaspoon kosher salt
Ground black pepper, to taste
Preparation
Avocado toast:
- Toast bread. Spread mashed avocado evenly over each slice. Season with kosher salt and ground black pepper. Add optional red pepper flakes or everything bagel seasoning. Set aside.
Veggie scramble:
- Heat olive oil or butter in a nonstick skillet over medium heat. Add bell pepper, onion, mushrooms, and zucchini. Sauté for four to five minutes until vegetables are softened.
- Add spinach and cherry tomatoes to the skillet. Cook for one to two minutes until spinach wilts and tomatoes are slightly softened.
- Pour Eggland’s Best liquid egg whites over the vegetables. Stir gently and cook for two to three minutes until egg whites are fully set but still soft. Sprinkle cheese on top, if using, and allow to melt slightly.
- Assemble the dish. Spoon the veggie scramble over the prepared avocado toast. Serve immediately.
