Ingredients

4 leftover everything bagels, cut into bite-size pieces

10 breakfast sausages, cut into bite-size pieces

4 Eggland's Best eggs, large

1 cup whole milk

3/4 cup freshly grated cheddar cheese

1/2 cup finely shredded mozzarella cheese

1/2 teaspoon ground mustard

1/4 teaspoon salt

Pinch of black pepper

4 ounces block cream cheese, cut into bite-size pieces

1 tomato, diced, optional for garnish

1 avocado, diced, optional for garnish

Preparation

  1. Preheat the oven to 375°F.
  2. Lightly coat an 8x8-inch or similar size casserole dish with baking spray.
  3. Scatter the bagel pieces into the bottom of the dish.
  4. Scatter the sausage and cream cheese over the top of the bagels.
  5. In a bowl, combine the eggs, milk, cheese, mustard, salt, and pepper. Pour evenly over the bagel mixture.
  6. Bake in the oven for 40-45 minutes, or until the center is set and edges are golden brown.
  7. Remove from the oven and add tomato and avocado.
  8. Let it cool for 10 minutes, then slice, and serve.
