Freezer Breakfast Burritos
Recipe by: Amanda Hernandez, RD
Freezer Breakfast Burritos are perfect for a busy morning- just reheat and eat! Loaded with scrambled eggs, cheese, veggies and turkey sausage in a whole-wheat tortilla.
Ingredients
5 Large Eggland's Best Eggs
1/4 cup milk
1/2 teaspoon black pepper
1/2 teaspoon onion powder
5 whole-grain tortillas
1/3 cup finely chopped broccoli
1 chopped roma tomato
2/3 cup arugula
1/2 cup shredded mozzarella cheese
4 turkey sausage patties, cooked and diced
Preparation
- Whisk together eggs, milk, black pepper and onion powder. Heat a medium pan and spray it with nonstick spray. Add in eggs and cook until your scrambled eggs are cooked through.
- In a tortilla, add in eggs, broccoli, tomato, arugula, cheese and sausage.
- Fold in the ends of the tortilla and roll into a burrito. If enjoying right away, you can heat these up in the microwave for 30 seconds or toast in a pan for a couple minutes. If you're freezing these, wrap them individually in aluminum foil and freeze. Cook for about 60-90 seconds to heat when you're ready to eat.
