Gingerbread Tres Leches Cake
The Gingerbread Tres Leches Cake is a decadent and festive dessert that beautifully marries the rich, spiced flavors of gingerbread with the indulgent nature of a classic Tres Leches Cake.
Ingredients
Cake
1 13.25 oz yellow or white cake mix package
3 Eggland's Best eggs, large
1 cup whole milk
1/2 cup neutral oil
1.5 tsp gingerbread spice powder (ground ginger, cinnamom, cloves & nutmeg)
Tres Leches Soak (Makes extra for serving)
12 oz evaporated milk
14 oz sweetened condensed milk
3/4 cup heavy cream
1/2 tsp gingerbread spice powder
Topping
2 cups whipped cream
Gingerbread spice powder for dusting
Preparation
Cake
- Preheat your oven to 350°F. Grease a 9x13-inch baking dish.
- In a large mixing bowl, beat together eggs, oil and milk.
- Add the cake mix and gingerbread spices. Mix until just combined.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool for about 30-40 minutes.
Soak cake with Tres Leches Mixture
- In a mixing bowl, combine sweetened condensed milk, evaporated milk, whole milk, and gingerbread spices. Whisk until well combined.
- Using a fork or toothpick, poke holes all over the surface of the cooled gingerbread cake.
- Pour the tres leches mixture over the cake. Allow the cake to absorb the liquid for at least 1-2 hours in the refrigerator or overnight for the best results.
- Prior to serving, spread whipped cream over the top of the soaked cake.
- Optionally, dust the cake with ground gingerbread spice powder.
