Grandma’s Passover Raspberry Squares

Ingredients
- 2 Eggland's Best eggs
- 1 cup sugar
- 1 cup matzoh meal
- 3/4 cup vegetable oil
- 1 cup shredded coconut
- 1/2 cup walnuts, chopped
- 1 jar raspberry jam
Preparation
- Preheat oven to 375 degrees F; line an 8 x 8 baking dish with parchment paper and set aside.
- Stir together sugar, matzoh meal, oil, and eggs until thoroughly combined; fold in shredded coconut and chopped walnuts.
- Spread half of the mixture into the prepared baking dish; spoon raspberry jam evenly over matzoh mixture.
- Repeat spreading matzoh mixture over raspberry jam and patting down evenly.
- Bake for 30-35 minutes; cool completely before serving.
