Ingredients

6 Eggland's Best Eggs, large

2 ripe avocados

1 tablespoon cilantro, chopped, plus some for garnish

1 tablespoon finely minced red onion chopped for garnish

1 to 2 teaspoons small diced jalapeño, optional for garnish

Pinch of garlic powder

1 tablespoon freshly squeezed lime juice, from 1 lime

1/2 teaspoon salt

Preparation

  1. Boil eggs and drain.
  2. Peel the hard-boiled eggs, slice them in half, and scoop out the yolks. Place the yolks in a bowl. Set the white halves aside.
  3. Peel and mash the avocado in a bowl with a fork or electric whisk.
  4. Mash the egg yolks well. Add the mashed egg yolks, cilantro, onion, jalapeño, garlic, lime juice, and salt to the mashed avocado and mix them all together until completely combined. Add salt to taste.
  5. Place the filling in a piping bag or simply use a spoon to add it to the empty egg white halves.
  6. Add chopped cilantro or jalapeño for garnish.
