Ingredients

2 Eggland's Best eggs, hard cooked or 2 Eggland's Best Hard Cooked Peeled Eggs

1/4 cup fat free plain Greek yogurt

1 tablespoon fresh parsley, chopped

4 black olives, pitted and chopped

Pinch of black pepper

1 tablespoon honey

Preparation

  1. Bring a pot of water to boil and hard cook eggs for about 12 min. Cool and peel. If using Eggland's Best Hard Cooked Peeled eggs, skip to step 2.
  2. Using a fork, mash the hard cooked eggs with the Greek yogurt until they reach your desired consistency.
  3. Once the eggs and yogurt are well combined, add in olives, parsley, pepper, and blend well.
  4. Drizzle with honey and serve on your favorite whole-grain crackers or whole-wheat toast.
