Guiltless Egg Salad

Ingredients
2 Eggland's Best eggs, hard cooked or 2 Eggland's Best Hard Cooked Peeled Eggs
1/4 cup fat free plain Greek yogurt
1 tablespoon fresh parsley, chopped
4 black olives, pitted and chopped
Pinch of black pepper
1 tablespoon honey
Preparation
- Bring a pot of water to boil and hard cook eggs for about 12 min. Cool and peel. If using Eggland's Best Hard Cooked Peeled eggs, skip to step 2.
- Using a fork, mash the hard cooked eggs with the Greek yogurt until they reach your desired consistency.
- Once the eggs and yogurt are well combined, add in olives, parsley, pepper, and blend well.
- Drizzle with honey and serve on your favorite whole-grain crackers or whole-wheat toast.
