Healthy Lemon Bars

We've crafted these bars using natural maple syrup for sweetness and nutritious alternative flours, making them gluten-free and dairy-free (when using vegan butter or coconut oil). Each bite delivers pure citrus bliss!
Ingredients
Crust
1/4 cup melted coconut oil
¼ cup honey
¼ teaspoon almond extract
1 1/2 cups packed fine blanched almond flour
2 tablespoons coconut flour
1/4 teaspoon salt
Filling
4 Eggland's Best eggs, large
Zest from 1 lemon
2/3 cup freshly squeezed lemon juice (from about 2-4 lemons)
½ cup maple syrup or honey
1 tablespoon coconut flour
Preparation
- Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, whisk together the melted butter (or coconut oil), maple syrup, and almond extract until smooth. Add the almond flour, coconut flour, and salt, stirring until a dough forms.
- Press the dough evenly into the bottom of the prepared baking pan. Use your hands or the back of a spoon to smooth it out.
- Bake the crust for 15-18 minutes, or until lightly golden around the edges. Remove from the oven and set aside to cool slightly.
- While the crust cools, prepare the filling. In a large bowl, whisk together the lemon zest, lemon juice, maple syrup, and eggs until fully combined. Sift in the coconut flour and whisk again until smooth and slightly thickened.
- Pour the filling over the pre-baked crust and return the pan to the oven. Bake for 18-22 minutes, or until the center is just set and no longer jiggly.
- Remove from the oven and let cool completely at room temperature. Then, transfer to the refrigerator to chill for at least 2 hours.
- Once chilled, lift the bars out of the pan using the parchment paper. Slice into squares and sift powdered sugar on top. Garnish with extra lemon zest if desired.
