Ingredients
1 cup Eggland’s Best liquid egg whites
1 cup chopped spinach
1 red bell pepper, diced
¼ cup chopped broccoli
2 green onions, chopped
2 tablespoons shredded cheddar cheese
1 tablespoon unsalted butter
1/4 teaspoon kosher salt
Ground black pepper, to taste
Preparation
- Preheat oven to broil.
- Heat a small (8-inch) nonstick, oven-safe skillet over medium heat. Add unsalted butter and allow it to melt.
- Add red bell pepper and broccoli to the skillet. Stir occasionally and cook for five to seven minutes until softened.
- Add chopped green onions, kosher salt, and ground black pepper to the skillet. Stir and cook for one minute.
- Add spinach a handful at a time, stirring until wilted, about one to two minutes.
- Whisk Eggland’s Best liquid egg whites in a bowl until slightly foamy.
- Pour egg whites slowly over the vegetables. Do not stir—let the edges set until opaque white.
- Sprinkle shredded cheddar cheese evenly over the top.
- Move the skillet carefully to the oven and broil for two to three minutes, until the eggs puff up.
- Slice and serve. Cut into wedges and enjoy with avocado or your favorite side.
