Ingredients
Tuna waffle:
1 can tuna, drained
1 Eggland’s Best egg
¼ cup cottage cheese
¼ cup egg whites
¼ cup shredded mozzarella or cheddar
2 tbsp almond flour (or any GF flour)
1 tbsp chopped chives or green onion
Salt, pepper, garlic powder
Topping:

Optional: avocado slices, chili crisp, microgreens, lemon zest
Preparation
Make the tuna waffle
- Mix tuna, egg, cottage cheese, egg whites, cheese, almond flour, chives, garlic powder, salt and pepper.
- Stir until thick and scoopable.
- Add to a preheated waffle maker.
- Cook 3–4 minutes until golden and crisp.

- Lightly oil a pan.
- Crack in the egg.
- Cook on low until whites are set and yolk is glossy.
Assemble
