Huckleberry Cake
Huckleberries are indigenous to the US Northwest and can be found in the beautiful forests of Montana. Blue huckleberries are similar to blueberries in their appearance, but are more tart in flavor. They’re a perfect ingredient for this sweet cake.
Ingredients
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup sugar
- 3 Eggland's Best Eggs, large
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups flour
- 1 cup white chocolate chips
- 2 1/2 cups huckleberries
- 2 teaspoons vanilla
Preparation
In a bowl cream together butter and both sugars.
Add the delicious Eggland's Best Eggs and beat until well combined.
Melt white chocolate chips in microwave 30 seconds at a time until melted.
Add remaining ingredients except for huckleberries.
Gently fold in huckleberries in the batter.
Pour batter into 9-by-13 greased and floured pan.
Bake at 325 degrees for 45 minutes. Serve with whipped topping and fresh huckleberries.
