Huevos Rancheros (Snack Version)
An easy Mexican Inspired Breakfast turned into a Snack. Crispy fried corn tortillas topped with refried beans, fried eggs, salsa, Oaxaca cheese, cilantro and lime juice - a sensational breakfast!!!
Ingredients
6 Eggland’s Best large eggs
6 tostadas
½ cup refried beans, warmed
⅓ cup favorite salsa
⅓ cup crumbled Oaxaca cheese
Preparation
1. Bring a saucepan of water to a boil.
2. Gently place 6 eggs in the boiling water and cook for 6 1/2 minutes.
3. Remove to a boil of ice water. Peel eggs then set aside. (This step can be done up to 2 days ahead of time.)
4. When you’re ready to snack, top tostada with refried beans, salsa, a jammy egg cut in half, and a sprinkling of Oaxaca cheese.
