Decadent brownie trifle layers featuring rich brownie chunks layered with clouds of fresh whipped cream and a vibrant mixed berry sauce, combining raspberries, blueberries and strawberries for the perfect dessert.

Ingredients

Brownies

4 oz Semisweet Chocolate, Chopped

3/4 Cup White Sugar

1/4 Cup Dark Brown Sugar

1 1/2 Tbsp Vegetable Oil

2 Large Fresh Eggs

2 Tsp Pure Vanilla Extract

1/2 Cup All Purpose Flour

1/2 Cup Dutch Process Cocoa

1/2 Tsp Fine Sea Salt

Berry Filling

1 Cup Fresh Blueberries

3/4 Cup Strawberries, Diced

1/2 Cup Fresh Blackberries

1/2 Cup White Sugar

2/3 Cup Water

1 Tbsp Fresh Lemon Juice

1 1/2 Tbsp Cornstarch

2 Tbsp Water (Kept Separate)

Whipped Cream

2 Cups Heavy Cream

3 Tbsp White Sugar

1 1/2 Tsp Vanilla Extract

Preparation

  1. Start the berry filling by combining berries, water, sugar and lemon juice in a saucepan over medium heat.
  2. Let mixture come to a boil and simmer 5-7 minutes.
  3. Whisk cornstarch with separate water until smooth.
  4. Pour cornstarch mixture into boiling berries, stirring constantly.
  5. Continue stirring until sauce thickens, then remove from heat.
  6. Transfer to a heatproof container and cool completely.
  7. Heat oven to 350°F.
  8. Line 8x8 pan with parchment, leaving overhang on two sides.
  9. Place butter and chocolate in large bowl.
  10. Microwave in 45-second intervals, stirring between, until melted.
  11. Mix in sugars, eggs, oil and vanilla until well combined.
  12. Sift dry ingredients together and fold into batter.
  13. Mix just until incorporated.
  14. Spread brownie batter evenly in prepared pan.
  15. Bake 20-25 minutes until center is slightly jiggly.
  16. Allow to cool fully.
  17. Once brownies cool, prepare whipped cream.
  18. Combine cream, sugar and vanilla in bowl.
  19. Beat on low speed until thickened, then high speed 2 minutes until stiff peaks form.
  20. Cut brownies into bite-sized pieces and layer in serving glasses.
  21. Top brownie pieces with berry sauce, then pipe or spoon whipped cream.
  22. Garnish with fresh berries and chocolate shavings before serving.
