Ingredients

4 Eggland's Best eggs, large (soft-boiled)

8 rice paper sheets

1 tbsp soy sauce

1 tsp sesame oil

chili crunch

scallions

avocado slices

Preparation

  1. Soft boil eggs 6½ minutes, cool and peel.
  2.  Wrap each egg in soaked rice paper.
  3. Fold like a dumpling.
  4. Pan fry in oil until golden and shatter-crisp.
  5. Slice open and top with chili crunch and scallions.

Sauce

  1. Combine soy sauce, sesame oil and splash rice vinegar.
