Liv's Champion Egg Bowl

Ingredients
Liv's Champion Egg Bowl
2 Large Eggland's Best eggs
1/2 cup red cabbage
Cilantro
1 tsp cumin
2 tsp chili powder
1/2 cup black beans
Cheese (cheddar or cotija)
1/2 cup pickled onions
Homemade Guacamole
Liv’s Famous homemade Guacamole!
1 avocado
1 lime
1/4 cup onions
1/2 cup tomato
Salt & Pepper
Dash of chili and cumin
1/2 clove garlic
Preparation
- Start by making my famous guac! Yum. Mash avocado, mix in diced tomato, onions, minced garlic, lime juice, cilantro, salt, pepper and chili powder. Set aside.
- Sauté diced onions in a pan and then add black beans with cumin and chili powder.
- Assemble your bowl: layer warm black beans as the base, add diced red cabbage, pickled onions, and a generous scoop of guac.
- Heat up your pan with some butter over medium heat. Crack 2 Eggland's Best eggs and cook over-easy (about 2-3 minutes, flipping once for only 10 seconds on that side and place into bowl).
- Top with your perfectly cooked eggs, sprinkle with cheese and fresh cilantro.
- Enjoy! :)
