Ingredients

2 cups pancake mix

1 ¼ cups water

2 Eggland's Best eggs, large

1 lb breakfast sausage

1 cup shredded cheddar cheese

¼ cup maple syrup

Preparation

  1. Preheat oven to 400 degrees F and spray a mini muffin tin with non-stick spray, and set aside.
  2. In a skillet over medium-high heat, brown the breakfast sausage. Once browned, drain off any excess grease.
  3. Combine pancake mix, water, eggs, and maple syrup in a mixing bowl. Mix until smooth.
  4. Fold in shredded cheese and cooked sausage.
  5. Distribute the batter evenly in your greased muffin tin, then bake for 12-15 minutes.
  6. Serve warm with maple syrup for dipping.
