Mini Breakfast Bagel Bites

Ingredients
5 Eggland’s Best Eggs, large
6 mini bagels, cut in half
6 tablespoons Garlic & Herb Cheese spread
5 fresh large eggs, scrambled
1/2 cup freshly shredded cheddar cheese
6 crispy bacon strips, crumbled into pieces
1 tablespoon fresh chives, finely chopped
1 ounce whole milk
Preparation
- Begin by combining the eggs and whole milk in a medium mixing bowl. Whisk thoroughly until well incorporated and slightly frothy.
- Place a large skillet over medium heat and add butter. Once melted, pour in the egg mixture. As the eggs begin to set around the edges, use a spatula to gently scrape along the bottom, creating fluffy scrambled eggs. Meanwhile, in a separate pan, cook the bacon strips until they reach your desired crispiness, following package instructions.
- Transfer the cooked bacon to paper towels to drain excess grease, then break into small pieces. Split your bagels and toast them until golden brown. While they're still warm, spread each cut side generously with the garlic and herb cheese. Top with a portion of the scrambled eggs, sprinkle with shredded cheese and bacon pieces. Finish with a garnish of fresh chives and serve immediately!
