Ingredients

3 Eggland's Best eggs, large

2 Large ripe bananas, mashed

½ cup of minced vegetables of your choice (I used zucchini and carrots)

1 ½ cup of flour

¼ cup of milk

¼ cup of olive oil

1 teaspoon of baking soda

1 teaspoon of vanilla extract

Preparation

  1. Stir all ingredients together until well combined, then pour the batter into a greased loaf pan. Bake for 50–60 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
