Ingredients

2 Eggland’s Best eggs

1 1/4 cup fresh orange juice (from 2 large oranges)

1/2 cup granulated sugar

1/4 cup cornstarch

6 TBSP. unsalted butter

Zest of 1 orange

4–6 hollowed-out orange halves (for serving)

Preparation

  1. In a bowl, whisk the Eggland’s Best eggs, sugar, and cornstarch until very smooth.
  2. Add the orange zest and fresh orange juice. Mix well.
  3. Transfer the mixture to a saucepan and place over low heat. Cook while whisking constantly until the curd thickens.
  4. Once thickened, continue cooking for 2–3 additional minutes to fully activate the cornstarch.
  5. Remove from heat and immediately add the butter. Whisk until fully melted and incorporated.
  6. Transfer the curd to a bowl and cover with plastic wrap directly touching the surface.
  7. Refrigerate until fully chilled, at least 1–2 hours.
  8. Before serving, whisk the chilled curd to smooth it out.
  9. Spoon or pipe the orange curd into the hollowed orange shells and serve.
