Peach Galette

A delightfully flaky and crisp pie crust, topped with cream cheese and fresh, juicy peaches.
Ingredients
Galette Dough:
4 cups all-purpose flour
2 tbsp sugar
2 tsp baking powder
2 tsp freshly ground black pepper
1 tsp kosher salt
1 1/ 2 cups unsalted butter, cut into small pieces
2 Eggland's Best eggs, large
2/ 3 cup ice water, plus more as needed
For the toppings:
Cream cheese
Sliced peaches
Cherry syrup (optional)
Preparation
- Using a food processor, hand mixer, or dough blade mixing just until dough comes together. Add a little more water if too dry.
- Divide dough into 2–3 portions, shape into discs, wrap, and chill for about 30 minutes to an hour.
- After chilling, roll each dough portion into a circle. Spread the cream cheese onto the dough, arrange sliced peaches in a circular pattern in the center of the dough, making sure to leave enough dough to fold over the edge of the filling.
- Pinch the dough to form a seal to prevent the filling from leaking out during the baking process.
- Bake at 360°F until golden brown (around 20 min).
- Drizzle with cherry syrup if desired.
