This Cheesy and Flaky Prosciutto, Egg & Asparagus Holiday Pastry is an impressive make-ahead brunch recipe perfect for Christmas morning, Easter, Mother's Day, and holiday entertaining. Filled with savory prosciutto, eggs, asparagus, and melted cheese, it's a delicious centerpiece for any special occasion.

Ingredients

7 Eggland's Best Eggs

2 puff pastry sheets

18 asparagus stalks, only the top 2 inches

6 tsp everything bagel seasoning

12 slices of proscuitto

1/2 cup shredded mozzarella cheese

chopped parsley for garnish

Preparation

  1. Preheat the oven to 425°F.
  2. In a large bowl, prepare an ice bath. Blanch asparagus tips for 1 minute and then transfer to the ice bath before removing them and patting them dry with a paper towel.
  3. To make the egg wash, crack 1 egg into a small bowl and stir with a fork.
  4. Brush one puff pastry sheet with the egg wash and place the second sheet on top, and cut into 6 rectangles.
  5. Score a ½" border on each rectangle and poke the centers with a fork.
  6. Transfer pastries to the baking sheet, brush borders with egg wash, and sprinkle edges with Everything Bagel seasoning.
  7. Bake for 15 minutes until puffed and lightly golden, then flatten the centers with a spoon.
  8. Add ¼ cup cheese to each center and place 2 slices of prosciutto and 3 asparagus tips around the edges, leaving room for the egg whites.
  9. Pour egg whites into the center of each pastry, season with pepper and salt, add the other ¼ cup cheese and bake for 15 minutes until egg whites set.
  10. Add an egg yolk to each center and bake 5 minutes for runny or 8 minutes for firmer yolks.
  11. Sprinkle with parsley and enjoy.
