
Protein Cookie Bites

Bring these protein cookie bites in your pickleball bag to fuel your game, and if you decide to share them, you’ll be the most popular player on the court. Made with energizing ingredients like EB eggs, oats, and protein powder, these bites have a 2:1 ratio of carbs to protein to energize your game while also supporting muscle repair.
Ingredients
2 Eggland’s Best Eggs, large
1/2 cup natural peanut butter
4 tablespoons maple syrup
1/2 cup vanilla protein powder
1/2 cup rolled oats
1/4 cup dark chocolate chips
1/4 teaspoon sea salt
Preparation
- Pre-heat oven to 350 degrees F.
- In a medium bowl, whisk Eggland’s Best Eggs and stir in peanut butter and maple syrup.
- Add in protein powder and oats and stir until fully mixed. Then fold in chocolate chips.
- Scoop the batter into 24 mounds on a parchment-lined baking sheet and top each with a pinch of salt.
- Bake about 8 minutes, or until bottoms are golden. Let cool for 15 minutes & enjoy.
Storage: Store in an airtight container at room temperature for up to 3 days, in the fridge up to 7 days, or freeze for up to 3 months.
