Ingredients

2 Large Eggland’s Best eggs

1/4 lb ground beef

1/2 cup onions

1/2 cup sweet pepper

3/4 cup tomato

1 garlic clove

1/2 tsp chilli powder

1/2 tsp cumin

Salt and Pepper

1 tbs butter

1/2 cup cheddar cheese

1 slice of sourdough

Preparation

  1. Start by chopping up all vegetables and mincing the garlic.
  2. Add butter to a pan and once melted, sauté onions, garlic and peppers until soft.
  3. Add ground beef and season with spices. Cook until browned.
  4. Add tomatoes, let everything meld together for a few minutes.
  5. Create wells in the mixture and crack Eggland's Best eggs into them.
  6. Top with cheddar cheese, cover and cook until eggs are done to your liking. (I love my eggs on the softer side since the yolk adds so much flavor!)
  7. Serve with 1 slice of toasted sourdough with butter. Enjoy!
