Protein-Packed Quinoa Bowl

Ingredients
1 Large Eggland's Best egg
3⁄4 cup red quinoa
3⁄4 cup black beans
3⁄4 cup corn
1 medium ripe avocado
3⁄4 cup salsa
Preparation
- Bring quinoa and water to a boil in a medium saucepan. Reduce heat to low. Cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes.
- Fluff with a fork.
- Add quinoa to a serving bowl.
- In another pan, cook Eggland's Best egg over medium heat for about three minutes.
- Top quinoa with black beans, corn, salsa and Eggland's Best egg.
- Serve and enjoy!
