
Quick and Easy Donut Holes

Light, fluffy, and perfectly sweet, these little treats come together in no time and are ideal for dessert or an anytime snack.
Ingredients
2 Eggland’s Best eggs, large
2 1/4 cups (300 grams) self-rising flour (if using all-purpose flour, add 2 tsp baking powder)
2/3 cup (170 grams) granulated sugar
2 cups Greek yogurt 400 grams (or non-dairy yogurt for a parve version)
Pinch of salt
Zest of 1 lemon
About 3 cups of oil for frying (canola, vegetable, or grapeseed oil)
Powdered sugar for dusting
Your favorite jelly on the side
Preparation
- Heat the oil: Pour oil into a large pot and heat to 365°F (use a thermometer to maintain temperature).
- Mix the dough: In a large bowl, combine the self-rising flour, eggs, sugar, yogurt, salt, and lemon zest. Mix until the dough is smooth. It should be neither too thick nor runny.
- Scoop the dough: Use a mini scooper or a spoon coated with oil for easy release. This helps make uniform donut holes.
- Fry the donuts: Drop the dough into the hot oil, rotating the donuts as they fry to ensure even cooking. Fry until golden brown, about 2-3 minutes per side.
- Drain: Remove the donut holes from the oil and set on a wire rack to ensure them crispy.
- Dust and serve: Generously dust the donuts with powdered sugar and serve with your favorite jelly.
