Raspberry Linzer Cookie

These Jam filled cookies are a healthy take on classic cookies. These are gluten-free and a must addition to your Christmas cookie box!
Ingredients
2 cups almond flour
2 cups gluten-free flour
2 cups oat flour
2 tbsp lemon zest
1 tbsp vanilla extract
2 Eggland's Best eggs, large
1/2 tsp salt
1 1/2 cup unsalted butter
1 1/2 cup sugar
1 cup raspberry jam
Preparation
- Preheat the oven at 350°F.
- In a bowl add dry ingredients. In a separate bowl add egg, butter and sugar, whisk until fluffy. Now add lemon zest and vanilla. Add dry ingredients to wet.
- Cover in plastic wrap and refrigerate for 1 hour.
- Roll out the dough. Cut out the cookies with a cookie cutter. And then place it on a baking sheet and bake for 15 minutes. Once completely cool assemble with one tsp jam to one of the cookies and then place the second on top.
- Add powdered sugar on top (completely optional)
