Salmon Puffs

Delicious for breakfast, or serve as an appetizer for your next party.
Ingredients
- 4 puff pastry shells
- 1 tablespoon butter
- 4 Eggland's Best eggs, large
- 2 tablespoons Creme Fraiche (or 2 tablespoons heavy cream)
- 2 teaspoons chopped chives, plus extra for garnish
- 1/2 teaspoon lemon zest
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 4 oz. goat cheese
- 4 oz. smoked salmon
Preparation
- Prepare puff pastry shells according to package instructions.
- Whisk eggs together with salt and pepper and set aside.
- In a medium saute pan melt butter over medium-low heat; add eggs and creme fraiche (or heavy cream). Stir with a rubber spatula continually until eggs are just cooked - eggs should have a small curd, like ricotta, and should remain moist.
- Add chopped chives and lemon zest and stir to combine.
- Cut goat cheese into 1 oz. rounds; place 1 oz. goat cheese in the bottom of each puff pastry cup.
- Top with 1/4 cup egg mixture, 1 oz. salmon, and 2 1-inch pieces of chive.
