Sausage, Apple & Walnut Johnnycakes
Fall is a magical time to visit an orchard and buy apples & buttermilk to create these Kentucky Johnnycakes that are sweet, savory, & studded with walnuts.
Ingredients
- 3/4 cup flour
- 1/2 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large Eggland’s Best eggs
- 1 cup buttermilk
- 3 tablespoons maple syrup
- 1/2 cup diced apples
- 1/2 pound bulk sausage, cooked and crumbled
- 1/4 cup walnuts, toasted and finely chopped
- 2 tablespoons butter, for greasing griddle
- additional maple syrup, for serving
Preparation
In a small bowl, combine the flour, cornmeal, baking powder, baking soda, and salt.
Add in the eggs, buttermilk, and maple syrup and stir with a spatula until just combined. Add the apples, sausage crumbles, and walnuts.
Heat a pancake griddle over medium heat and grease with a small amount of butter.
Drop ladles of batter to form 4 inch pancakes, cooking pancakes for 2-3 minutes before flipping, or until the batter puffs up and becomes golden brown on the first side.
Flip pancakes and continue to cook for an additional 1-2 minutes, until cooked through and nicely browned.
