Ingredients

4 Eggland's Best eggs, large

1/2 cup shredded zucchini (squeeze out excess water)

1/4 cup shredded carrot

1/4 cup shredded cheese (cheddar or mozzarella)

2 tbsp chopped cilantro

1/4 tsp salt (adjust to taste)

1/4 tsp garlic powder

1/3 cup Greek yogurt 

2 tablespoons hot sauce

Oil to spray waffle maker

Preparation

  1. Preheat waffle maker and grease with oil spray.
  2. Whisk eggs, then mix in zucchini, carrot, cheese, cilantro, salt, and garlic powder.
  3. Pour mixture into waffle maker, cook for 3-5 minutes until golden.
  4. Serve with Greek yogurt and hot sauce.
