Savory Sausage, Apple & Cranberry Bread Pudding

Ingredients
1 loaf gluten-free bread
1 lb mild Italian sausage
1 tbsp olive oil
1 medium onion, diced
1 apple, peeled and diced
1 tbsp chopped fresh sage
4 Eggland’s Best eggs, large
2 cups milk
2 tsp kosher salt
½ tsp ground nutmeg
½ tsp ground sage
¼ tsp black pepper
1 cup shredded Gruyère cheese
1 cup of fresh cranberries
Preparation
- Preheat oven to 350°F (175°C). Cut gluten-free bread into 1-inch cubes and spread on a baking sheet. Toast for 10–15 minutes, until lightly crisp. Set aside.
- In a large skillet over medium heat, cook Italian sausage, breaking it apart with a spatula, until browned and fully cooked. Remove from skillet and set aside.
- In the same skillet, heat olive oil. Add diced onion and cook 3–4 minutes until softened. Stir in diced apple and chopped fresh sage; cook 2–3 minutes until fragrant. Remove from heat.
- In a large bowl, whisk Eggland’s Best eggs, milk, salt, nutmeg, ground sage, and black pepper until smooth. Add the toasted bread crumbs and gently stir until the bread is evenly coated. Let soak for 5-10 minutes to absorb the custard.
- Sprinkle the shredded Gruyère cheese evenly over the top. Cover the skillet tightly with a lid or foil and bake for 25 minutes. Remove the cover and bake an additional 20 minutes, or until golden brown and set in the center.
- Remove from the oven and let rest for 10 minutes before serving. Enjoy warm, straight from the skillet for a rustic and cozy presentation!
