Ingredients
6 Eggland’s Best eggs, large
2 medium sweet potatoes, diced and roasted
1 medium onion, thinly sliced
1 cup baby spinach
½ cup shredded Gruyère cheese
1 tbsp olive oil
Salt and pepper to taste
Preparation
