Spicy Egg Salad Naanwiches
Warm and delicious naan bread is a great alternative to traditional breads when constructing this spicy sandwich.
Ingredients
- 4 Eggland's Best eggs, hard cooked
- 1/4 cup mayonnaise
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon cumin
- 2 tablespoons toasted almonds, finely chopped
- Salt & pepper to taste
- 1/4 cup sweet onion, minced
- 1/4 cup cilantro, minced
- 1 jalapeno pepper, seeds removed; minced
- 4 leaves Romaine lettuce
- 1 tomato; seeded, diced and drained
Preparation
Hard cook eggs; cool and peel.
In a medium size mixing bowl, mash eggs with a fork and add mayonnaise; mix well and set aside.
In a small bowl blend cayenne, cumin, almonds, onions, cilantro, salt, pepper and jalapeno; add to egg mixture and blend well.
When ready to serve, heat butter and garlic until fragrant; turn naan in pan one by one until warm.
Top naan with lettuce and 1/4 of egg mixture; top with fresh tomato and extra cilantro; serve and enjoy.
