Ingredients

1 sheet puff pastry, thawed

2 Eggland’s Best eggs, large

½ cup chopped spinach (frozen, thawed and drained, or fresh lightly sautéed)

¼ cup chopped artichoke hearts, drained well

¼ cup cream cheese, softened

¼ cup shredded Gruyère (or mozzarella/parmesan blend)

2 tbsp sour cream or Greek yogurt

1 small garlic clove, minced

¼ tsp salt

Pinch black pepper

Preparation

  1. Preheat oven to 400°F (205°C). Lightly grease a mini muffin tin. Cut puff pastry into 2-inch squares and gently press each square into a muffin cup, creating little shells. Prick the dough with a fork to prevent over-puffing.
  2. In a medium bowl, whisk together eggs, cream cheese, and sour cream until smooth. Stir in spinach, artichokes, Gruyère, garlic, salt, and pepper.
  3. Spoon about 1 tablespoon of filling into each puff pastry cup, just below the top edge.
  4. Bake for 13–16 minutes, or until puffed, golden, and the centers are just set.
  5. Let cool slightly, then remove from the tin. Serve warm and garnish with a few chopped chives or a sprinkle of parmesan for a festive finish.
