Ingredients

2 Eggland's Best eggs, large

1 tsp olive oil

4 slices whole wheat bread

¼ cup shredded mozzarella cheese

2 slices tomato

½ avocado, mashed

1 small banana

8 oz nonfat milk

Preparation

  1. Warm a large skillet over medium-high heat and lightly coat with olive oil. Take a star-shaped cookie cutter and press it into the center of two bread slices to create star-shaped holes.
  2. Place one of the star-cut bread slices in the heated skillet. Carefully crack an egg into the star opening and repeat the process with the second slice. Let cook for 3-4 minutes until the eggs are set to your preference.
