Star-Shaped Egg in a Hole Sandwich

Ingredients
2 Eggland's Best eggs, large
1 tsp olive oil
4 slices whole wheat bread
¼ cup shredded mozzarella cheese
2 slices tomato
½ avocado, mashed
1 small banana
8 oz nonfat milk

Preparation
- Warm a large skillet over medium-high heat and lightly coat with olive oil. Take a star-shaped cookie cutter and press it into the center of two bread slices to create star-shaped holes.
