Street Corn Egg Salad
Inspired by Mexican street corn, this creamy egg salad combines sweet corn, cotija cheese, lime, and chili seasoning with Eggland's Best Hard-Cooked Peeled Eggs for a flavorful summer side dish.
Ingredients
1 package Eggland's Best Hard-Cooked Peeled Eggs (6 eggs), chopped
1/4 cup 2% plain Greek yogurt
1 cup corn kernels (fresh, canned, or thawed frozen)
1/4 cup cotija cheese, crumbled
2 tbsp fresh cilantro, chopped
1 1/2 tbsp lime juice
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
Preparation
- Place chopped eggs in a medium bowl.
- Add Greek yogurt, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper.
- Stir until combined.
- Fold in corn, cotija cheese, and cilantro.
- Mix gently and refrigerate until ready to serve.
- Garnish with additional cotija cheese and cilantro if desired.
Tips
- Can be made one day ahead. Great served with tortilla chips, crackers, lettuce cups, or as a topping for burgers and sandwiches.
