A twist on the classic burger, try this open-faced sunny-side up burger with any of your favorite seasonal vegetables!

Ingredients

  • 2 Eggland's Best eggs, large
  • 1 whole wheat English muffin, split
  • 8 oz lean ground turkey, divided
  • 2 slices, beefsteak tomato
  • 2 leaves, romaine lettuce
  • 2 slices, red onion
  • 1 tablespoon, dijon mustard, divided

Preparation

  1. Split an English muffin and toast until golden brown; cool completely and spread with dijon mustard; set aside.
  2. In a medium size nonstick skillet, prepare two 4-ounce turkey burgers, adding salt, pepper or your favorite seasonings; cooking for approximately 4-5 minutes on each side over high heat.
  3. In another large skillet over medium-high heat, crack two eggs and cook until whites are cooked through and yolks are firm, for approximately 4-5 minutes.
  4. To assemble burger, top each side of the English muffin with lettuce, tomato, and the turkey burger, carefully laying 1 egg on top of each.
  5. Serve open-faced and enjoy!
