Sweet & Fruity Eggy Cups

Ingredients
2 Eggland's Best eggs, large
2 ounces ricotta cheese
1/2 teaspoon vanilla extract
1 tablespoon sugar substitute (optional)
1/2 teaspoon lemon zest
2 tablespoons sugar-free granola or chopped nuts of choice
2 tablespoons assorted berries, fresh or frozen
Preparation
- Preheat the oven to 350°F and prepare four muffin liners or a muffin tin with non-stick spray.
- Mix the eggs, ricotta cheese, vanilla extract, sugar substitute, and lemon zest in a small bowl. It is ok to have clumps of cheese.
- Evenly divide the granola and assorted berries between the four prepared muffin liners or tin.
- Add the egg and cheese mixture, evenly, to each container.
- Bake for 20 to 25 minutes, until the eggs are firm and cooked throughout.
