Ingredients
6 Eggland's Best Eggs (large), boiled, cooled, and peeled
1-2 Tb Sour Cream
1 Small Tomato, chopped
2 Green Onions, chopped
1/2 Cup Taco Cheese Blend
1 tsp Favorite Taco Seasoning Blend
Shredded Lettuce to serve (optional)
Preparation
- Slice eggs in half and gently pop the yolks out into a bowl.
- In the bowl, add the yolks. Use a fork to thoroughly mash them until they reach a fine, crumbly consistency. Gradually incorporate the sour cream, starting with 1 tablespoon and adding more as needed, while continuously mixing until you achieve a smooth, creamy paste with the ideal spreading consistency. The texture should be light and fluffy, yet firm enough to hold its shape when piped.
- Mix in tomato, onion, cheese, and taco seasonings.
- Using either a piping bag fitted with a decorative tip for an elegant presentation, or two small spoons for a more rustic look, carefully fill each egg white half with the prepared taco-seasoned yolk mixture. Take care to distribute the filling evenly among all the egg white halves, creating attractive peaks or swirls on top.
- For the perfect finishing touch, arrange your taco deviled eggs on a bed of crisp, freshly shredded lettuce on your serving platter. Serve immediately for the best flavor and texture, or cover carefully and refrigerate for up to 4 hours before serving.
