Ingredients
Wraps:
4 Eggland’s Best eggs, large
1 tbsp olive oil
½ cup red bell pepper, diced
½ cup zucchini, grated and squeezed dry
1 cup baby spinach, chopped
¼ tsp garlic powder
2 whole grain tortillas (8-inch)
Herbed Yogurt Dip:
½ cup plain Greek yogurt
1 tbsp fresh parsley, finely chopped
1 tbsp fresh chives, finely chopped
½ tsp lemon juice
Pinch of salt
Preparation
- Heat olive oil in a non-stick skillet over medium heat.
- Add diced bell peppers and sauté for 2 minutes.
- Add zucchini and cook for another 2 minutes, stirring often.
