Western Egg White Omelet

Ingredients
1 cup Eggland's Best 100% Liquid Egg Whites
1/4 cup diced bell peppers (assorted colors)
1/4 cup diced onions
1/4 cup bacon (or ham)
1/4 cup shredded reduced-fat cheese
Salt and black pepper, to taste
Fresh green onions for garnish (chopped)
Preparation
- Heat a non-stick skillet over medium heat and coat with cooking spray. Add diced vegetables and sauté, once they partially cooked next add the protein and saute.
- In a bowl, whisk the egg whites until frothy.
- Pour the egg whites into the skillet and allow them to set slightly around the edges.
- Add the reduced-fat cheese.
- Carefully fold the other half of the omelet over the filling, creating a half-moon shape.
- Cook for an additional 3-4 minutes or until the cheese is melted, and the omelet is cooked through.
- Season with salt and black pepper to taste.
- Garnish with green onions.
