Ingredients

Salad:

2 cups baby spinach

½ cup skinless, shredded rotisserie chicken

3 strips cooked turkey bacon, roughly chopped

2 Eggland’s Best Hard Cooked Eggs, halved

½ cup halved cherry tomatoes

⅓ cup low-fat crumbled feta

½ ripe avocado, diced

Simple Vinaigrette:

3 tablespoons extra virgin olive oil

½ tablespoon red wine vinegar

Salt and pepper, to taste

Preparation
