Ingredients

6 Eggland’s Best Hard-Cooked Peeled Eggs, chopped

¼ cup mayonnaise

1 tbsp Dijon mustard

½ tsp smoked paprika

1 tbsp chopped fresh dill

1 tbsp finely chopped pickled jalapeños (optional for heat)

Salt and pepper to taste

6 Slider buns or mini brioche rolls

Butter lettuce or arugula

For Pickled Shallots:

1 medium shallot, thinly sliced

¼ cup apple cider vinegar

1 tsp sugar

¼ tsp salt

Preparation

  1. Pickle the shallots: In a small bowl, combine sliced shallots, apple cider vinegar, sugar, and salt. Let them sit for 15–20 minutes to soften and take on a tangy flavor.
  2. Prepare egg salad: In a mixing bowl, combine the chopped hard-cooked eggs, mayonnaise, Dijon mustard, smoked paprika, dill, jalapeños (if using), and a pinch each of salt and pepper. Stir gently to combine—keep the texture slightly chunky.
  3. Toast and prep buns: Lightly toast slider buns or brioche rolls.
  4. Assemble sliders: Place a lettuce or arugula leaf on each bun base. Add a generous scoop of egg salad, then top with a few pickled shallot rings. Cap with the top bun and serve immediately.
